For the ingredients:

Green pepper

Red pepper

2 potatoes, peeled

Aubergine

Courgette

Cut all of the above in cubes and place in an over tray with baby button mushrooms

Add tomato purée, chopped tomatoes and 5 cloves of garlic, chopped

Mix all of above with sea salt, ground black pepper and extra virgin olive oil

Add half a cup of water to tray then put in oven

Let it cook for about 60 minutes at 180 until all vegetables are soft

Add parsley on top

Serve with rice
